How to Make Air Fryer Zucchini

Step #1. Preheat your air fryer. Toss sliced zucchini, spices, and oil in a large bowl until slices are evenly coated.

      How do I prevent my zucchini from getting soggy? 

      To help prevent ending up with soggy zucchini you will want to avoid overfilling the air fryer basket. If most of your zucchini is overlapping then you will want to cook your veggies in two batches. The more space you have in the basket, the better the air will circulate and the more the zucchini will crisp up.

      What other spices can I add to my Zucchini? 

      Feel like trying something new? Try adding onion powder, paprika, or lemon pepper seasoning. If you prefer your zucchini more spicy, add extra red pepper flakes or swap out the spices for cajun seasoning. For less heat you can omit the red pepper flakes.

      Should I peel my Zucchini before slicing it? 

      This is completely up to you! It is definitely not necessary to peel the zucchini before slicing it, but it will not influence the flavor or texture of the end product either way. We typically leave the peel on our zucchini just to cut down on the prep time.

      How to Store Your Leftover Zucchini 

      If you happen to have any leftovers after enjoying this delicious side dish, you can store your leftover zucchini in an airtight container in the fridge. Your zucchini will be good for two days. For the best results, line the bottom of your storage container with a paper towel This will soak up excess moisture from the veggies and help make your zucchini less mushy when reheated. 

      Reheat your zucchini for about 45-60 seconds in the microwave. It is important to note that your zucchini will be a bit softer after being microwaved than when it was fresh from the air fryer. Alternatively, you can reheat your zucchini in the air fryer for 4-5 minutes at 350°F.

      • Check that the zucchini is completely firm. If you feel any softness when you gently apply pressure to the zucchini, it means that the zucchini is possibly beginning to rot and needs to be thrown out. 
      • The larger the zucchini, the more water content, and the less flavorful it will be. So try to stick with medium or small zucchini if possible.
      • It is important to ensure your zucchini is evenly coated in oil so that it cooks evenly. Shaking your zucchini halfway through the cook time will also help the veggies cook evenly.
