Mango Salsa
Bursting with the sweet and tangy essence of fresh mangoes, combined with a medley of colorful ingredients,

Ingredients
1 ¼
cup
whole corn
drained
1
cup
chopped mango
1
cup
finely chopped red onion
½
cup
finely chopped tomato
2
tablespoons
freshly chopped cilantro
2
tablespoons
lime juice
Instructions
Finely chop the mango, red onion, tomato, and cilantro.
In a large bowl, combine all of the ingredients. Use a large fork or spoon to fold the ingredients together until everything is evenly distributed.
Transfer the ingredients to a serving dish.
Serve with a side of chips or on top of tacos. Enjoy!
Notes
You can store this salsa in the fridge for up to 4 days in an airtight container or covered with plastic wrap.
The zest of the lime juice really helps balance out the sweetness in the mango and tomato.
If you want to add some extra zest to your salsa, you can add some fresh lime zest.
If you want to add a little extra heat to your salsa, you can add diced jalapenos.
You can use frozen mangos that have been thawed in the fridge so you don’t have to worry about peeling, pitting, and slicing a fresh mango.
