This Roasted Tomato & Sausage Pasta recipe is the easiest comfort food you will ever make, and it tastes wonderful! If you appreciate Italian cuisine, this pasta dish is the perfect meal. And it only takes 30 minutes to make!
Preheat the oven to 400 degrees F., and line a rimmed baking sheet with foil. Spread the chopped tomatoes on the foil, sprinkle on the minced garlic, drizzle with the olive oil, and then add the salt and pepper. Place the tomatoes in the hot oven, and roast for 15 to 20 minutes.
While the tomatoes are cooking, cook your pasta al dente, according to package directions.
In a large skillet, cook the sausage until it is no longer pink. When the pasta and tomatoes are both done, add them both to the skillet with the sausage. Add the olive oil, salt, pepper, and basil. Stir until well combined. Serve right away with grated fresh parmesan and more salt and pepper to taste.
Notes
You can use any type of pasta you prefer, but penne or spaghetti work particularly well with this dish.
If you prefer a spicier sauce, you can use hot Italian sausage or add a pinch of red pepper flakes while sautéing the onion and garlic.
Feel free to add any additional vegetables, such as bell peppers, mushrooms, or spinach to bulk up the dish and add extra flavor and nutrients.
