Ingredients
4eggs
¼teaspoononion powder
¼teaspoonsalt
1tablespoonbutter
¼cupdiced ham
3tablespoonsred onionsdiced (you can use sweet or white onions)
3tablespoonsdiced green bell pepperyou can use red or yellow pepper as well
⅓cupColby Jackshredded
Salt and pepper to taste
Instructions
In a small mixing bowl, break the eggs, and add the onion powder and salt. Whisk until blended using a fork. Set aside.
In a 9-inch skillet, over medium heat, add the butter.
Once the butter is melted, add the ham, onion, and bell pepper. Mix and keep cooking until the onions are nice and golden. 3-4 minutes
Spread the mixture evenly in the pan
Pour the eggs over the mixture and gently spread the eggs even in the pan.
Don’t mix and let it cook over medium heat until the top is set, not liquidy. about 5 to 6 minutes
While it is cooking, take a knife to release the edge of the eggs.
Sprinkle the cheese on one side.
Using a spatula, flip the other side over the cheese.
Let it cook for one additional minute.

Notes
This is a very common recipe with common ingredients. The key to this recipe is being patient after you pour the eggs and allow them to cook thoroughly. Don’t put the heat too high, as it will burn before it is cooked, and too low, as it will take longer to cook.
If you are making a 3-egg omelet, I suggest using a 7—or 8-inch pan. A 9-inch pan would be thinner.
