Turn on your waffle iron and allow it to preheat according to the manufacturer’s instructions.
In a large mixing bowl, whisk together the buttermilk, melted butter, eggs, vanilla extract, and brown sugar until well combined.
Add the flour, baking soda, baking powder, salt, and cinnamon. Mix to combine.
Lightly grease your waffle iron if needed. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until golden brown and crisp. Repeat with remaining batter. These waffles brown up quicker than normal because of the amount of sugar in them so keep an eye on them.
Serve warm with butter, maple syrup, fresh fruit, or whipped cream for a cozy, cinnamon-flavored breakfast.
Notes
These waffles freeze well! Let them cool completely, then store in an airtight container in the freezer. Reheat in a toaster or oven for a quick and delicious meal.
This is quite a sweet waffle which I think makes the cinnamon stand out more. If you don't want them quiet as sweet, you can reduce the sugar by half.
If you can find cinnamon chips, they are SO delightful added to this waffle batter.
While these waffles are delicious with traditional maple syrup, try serving them with a dollop of cinnamon-spiced whipped cream and sautéed apples for a dessert-worthy breakfast treat!
