Roll out your pizza dough into a thin sheet about 12 inches wide. Transfer your dough to a circular baking dish coated in olive oil or nonstick cooking spray.
Dice your fresh mozzarella and then top your pizza dough with the Buffalo sauce, cheese, shredded chicken, and chives.
Bake your pizza for 12 minutes, or until the cheese is bubbly.
Remove the pizza from the oven and top with the diced green onions.
Serve and enjoy!
Notes
You can use both store bought and homemade pizza crust for this recipe.
We like to use Buffalo Wild Wing sauce in this recipe, but feel free to use your favorite brand of Buffalo sauce!
Fresh mozzarella will melt down better and end up being more gooey than pre-shredded cheese. You can find a log of fresh mozzarella near the deli section of your local grocery store.
If you are looking for a quick and easy way to shred your chicken then try using an electric hand mixer. Place your cooked chicken in a bowl and use the beater attachments to shred the chicken on a medium speed.
Store your leftover pizza in the fridge for up to 4 days. You can keep the pizza in an airtight container or wrap individual slices in tin foil.
Reheat your pizza 1-2 slices at a time in the microwave for 45 seconds.
