Breakfast Quesadillas are loaded with hearty ingredients and gooey cheese, perfect with salsa or guacamole! Easy to make with just a few ingredients, this dish will quickly become a favorite.
If you haven’t already, cook your sausage and eggs.
Top a tortilla with 1/4 of the sausage, eggs, and cheese. Transfer the tortilla to a pan over medium-high heat and top with another tortilla.
Cool your quesadilla for about 3 minutes per side, or until golden brown.
Serve immediately with optional salsa and enjoy!
Notes
While these quesadillas are best served fresh, you can store them in an airtight container or wrap them in tin foil and keep them in the fridge for up to 4 days.
Reheat your quesadillas on the stove over low-medium heat or in the microwave.
Add some spice by using pepper jack cheese instead of regular cheddar.
Add some extra seasoning by sprinkling 1 teaspoon of Italian seasoning, freshly chopped parsley, or dried oregano over your eggs as they cook.
We like to use spicy ground sausage, but any kind of ground sausage will work great.
For an extra crunchy quesadilla, melt a tablespoon of butter in your pan before adding the quesadilla.
