Ingredients
4large flour tortillas
1cupcheddar cheese
2cupsscrambled eggsfrom 8 eggs
12slicesbaconcooked crisp
1large avocadosliced
salt and pepperto taste
hot sauce and/or salsaoptional
Instructions
Top a large burrito with scrambled eggs, cheddar cheese, bacon, and avocado.
Add salt and pepper and optional hot sauce and salsa to taste.
Fold one edge of the tortilla over the filling and roll the burrito tightly.
Heat a pan over medium-high heat and add the burritos with the seam side down. Cook the burritos until golden brown on both sides, about 5 minutes.
Serve and enjoy!
Notes
Other cheeses you can use include pepper jack, Colby jack, and Monterey jack.
These burritos are great served with a side of sour cream, chipotle sauce, or salsa.
For some heartier burritos, try adding fajita veggies or freshly sliced tomatoes to your burritos.
You can freeze these burritos for up to 3 months. Wrap them individually in a paper towel followed by plastic wrap. Reheat your frozen burritos in the microwave for 1 1/2 minutes.
You can also store these burritos for 4 days in the fridge. Reheat leftovers for 45 seconds per burrito.
