Six simple school and adult lunch box ideas made with Sabra Hummus, fruit, vegetables, and more. These back-to-school Quick and Easy Box Lunch Recipes are nutritious and tasty, and there are so many variations!
I love back-to-school season! It feels like like a great time to get back on a schedule, revisit your goals now that the hustle and bustle of summer vacation has passed, and regroup and get organized. One of my favorite ways to get organized is to collect a whole bunch of school lunchbox ideas and put them to use. I’m not trying to reinvent the wheel every morning and my kids aren’t getting burnt out on the same things over and over again.
Hummus is my favorite dip to stick in lunch boxes because it’s thick enough to not make a huge mess. With so many Sabra Hummus flavors to choose from, you’ll never have to repeat a lunch box twice. I like to make some main dish hummus recipes like hummus and veggie sandwiches, hummus ham roll-ups, and hummus chip dip and also use it as a side dish with veggies, crackers, or pretzels. Plus, it’s a healthy and simple after school snack when you pair it with an already prepped veggie box.

Tips for Getting an Easy Packed Lunch Out the Door:
- To cut down on morning prep time, make a veggie box and have the kids take from it for their lunches. Chopping the veggies ahead of time is a big time saver.
- If you have little kids below school age, it’s nice to make their lunch box (and yours!) in the morning when you are making the other lunches. I just stick the little boys’ lunches in the fridge and then lunch is done for everyone, even the ones at home!
- Have your kids help you decide what they want for lunch and get them involved in the prepping/packing. When my kids have a little say in their lunch, they are much more likely to eat it.
- Use cupcake liners to keep food separated.

Hummus Lunch Boxes
Ingredients
Main Dishes:
- Ultimate Hummus Veggie Sandwich, full recipe here!
- Easy Hummus Chip Dip – Sabra hummus and tomatoes, sliced black olives, and chopped green onion
- Boiled Eggs
- Cheese and Crackers – your favorite cheese, crackers, pretzels, and lunch meats
- Hummus and ham roll-ups – 1 tortilla, Sabra hummus, 4 thin slices ham luncheon meat, 1 large lettuce leaf, one cheddar cheese stick
- Dippins – apples, assorted veggies, crackers, and pretzels to dip in Sabra hummus and our favorite (and easy) Caramel Dip,
Sides
- Sabra Hummus
- Berries, (blackberries, raspberries, or blueberries)
- Mini dill pickles
- Sliced vegetables, (carrots, bell peppers, cucumbers, grape tomatoes)
- Fruit such as whole peaches, pears, or grapes
- Tortilla chips
- Small sweets such as chocolate-covered candies
Instructions
To make the Hummus Chip Dip:
- Layer hummus in one compartment of the lunch box or in a small container.
- Top with your choice of sliced fresh tomatoes, black olives, or sliced green onions.
- Classic, Taco Inspired, or Supremely Spicy Sabra hummus work best for this recipe.
How to make Hummus and Ham Roll Ups:
- Spread 2 tablespoons of hummus on a tortilla. Layer the ham and lettuce on top. Add a cheddar cheese stick to the middle and roll up the tortilla.
- Slice and place the pieces in the lunch box.
- I love this with Classic, Sun Dried Tomato and Italian Herbs, and Roasted Red Pepper Sabra hummus though they are all really good in this wrap.
To make the lunch box:
- Pick one of the main dishes and a few of the sides to fill the lunch box (pack more for bigger kids and smaller portions for younger kids)
- Add a sweet treat if desired.
Notes
- I love lunch boxes because they are so versatile! With different main dishes and side combinations, plus different Sabra hummus varieties, it’s pretty hard to make the same lunch twice!
