If you are looking for a quick and easy dinner idea, then this recipe is just the one for you! One pot meals are always a hit in my home, which I love because they are easy to make and clean up. This sausage, rice, and peas one pot dinner is satisfying, full of nutritious ingredients, and delicious. 

You’ll only need a few simple ingredients and some seasonings to throw this dish together, but the result is a savory and tasty meal. While the dish cooks, I usually make a quick salad or cut up some fruit to serve on the side and dinner is ready! This is a meal that you will want to make again and again.

Recipe Ingredients

  • Sausage—Sliced. Any type of sausage will work, so choose your favorite! 
  • Chicken Broth—To help cook the rice and infuse it with flavor.
  • Jasmine Rice—Can be replaced with any other kind of white rice.   
  • Peas—We like to use a bag of frozen peas.
  • Green Onions—Sliced thin. For a mild, soft flavor to bring together the seasonings.
  • Garlic—Minced. You can use fresh garlic or grab a bottle of pre-minced garlic.
  • Seasonings—A combination of black pepper, garlic powder, fresh parsley, and salt.
  • Olive Oil—To help sear the sausage and give it a nice crisp edge.

How to Make One Pot Sausage, Rice, and Peas Dinner

Step #1. Heat the oil in a large pot. Add the sausage and cook, stirring occasionally, until the sausage starts to sear. 

Step #2. Add the garlic and cook until fragrant. Add the broth, rice, garlic powder, and pepper. Stir and bring to a boil.

Step #3. Reduce the heat to low and cover with a lid. Cook until the rice is tender. Remove from the heat and add salt to taste. Stir in the peas, green onions, and parsley.

Step #4. Let the mixture rest to warm the peas. Serve and enjoy! 

Recipe FAQs

Can I use a different type of rice?

Of course! We love the aromatic and nutty flavor that jasmine rice offers, but you can substitute it for a different kind if that is what you have on hand. I suggest using a long grain white rice as it will cook quickly while still holding up well in the dish. Brown rice takes a long time to cook on the stovetop and I’m not sure how much liquid you would need. Also, it will be more difficult to fully cook with the other ingredients in there as well, so I would avoid using that if you can!

Why is the rice not cooking?

The rice should cook within 15-20 minutes! If you are finding that it is not cooking, there could be a few reasons. First, you might be cooking it at too high a temperature, which means the liquid will evaporate before the rice can cook. Once the mixture is brought to a boil, be sure to lower it to a simmer. Next, there might not be enough liquid in general. If the liquid is gone but the rice is still crunchy, add a bit more broth and let it simmer a bit longer. Lastly, you may have removed the lid too early, causing steam to escape which helps cook the rice. Set a timer and try not to bother the dish until the time runs out.

How to Serve and Store One Pot Sausage, Rice, and Peas Dinner

This one pot meal is a great easy dinner that can be paired with a variety of different sides! We love to serve this dish with fresh fruit such as strawberries or blueberries, a simple garden salad with vinaigrette, or even roasted veggies like brussel sprouts or zucchini. You really can’t go wrong! We also love to add some hot sauce or soy sauce on top of this dish to give it some extra flavor, so feel free to experiment with any of your favorite condiments. 

Any leftovers of this dish can be transferred to an airtight container once cooled, and stored in the fridge. The sausage, rice, and peas will stay fresh for up to 3 days. Reheat a portion of the dish in the microwave for 30-45 second intervals until warm. Alternatively, this

  • The amount of salt you need will depend on the type of broth you use, so taste as you go and adjust accordingly. 
  • We use fresh Italian parsley, but any kind of fresh or dried parsley will taste wonderful. 
  • This is a great base recipe, so feel free to modify it as you like! Substitute the sausage for a different meat or peas for a different vegetable if you need.

One Pot Sausage Rice and Peas Dinner

This One-Pot Sausage, Rice, and Peas recipe is an easy dinner idea that the whole family will love. Plus it takes less than 30 minutes to make!

Ingredients 

  • 1 teaspoons olive oil
  • 14-16 ounce smoked sausage, or kielbasa, sliced 1/4 inch thick
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 1/2 cups jasmine rice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 to 1/2 teaspoon kosher salt, if needed
  • 8 ounces frozen peas, about 1 1/2 cups
  • 4 green onions, sliced thin
  • 1/4 cup chopped fresh Italian parsley

Instructions 

  • Heat the oil in a large, deep-sided skillet or Dutch oven over medium high heat. Add the sausage and cook, stirring occasionally, until the sausage starts to brown and sear.
  • Add the garlic and cook until fragrant, about 30 seconds. Add the broth, rice, onion powder, and pepper. Stir and bring to a boil.
  • Reduce the heat to low, maintaining a simmer, and cover with a lid. Cook for 18-20 minutes, until the rice is tender and all of the liquid is absorbed.
  • Remove from the heat and add salt to taste. Stir in the peas, green onions, and parsley.
  • Let the mixture rest for a few minutes before serving to heat the peas.

Notes

  • The amount of salt needed is going to depend on the type of broth you used, so taste as you go and adjust accordingly.
  • If you don’t have jasmine rice you can use any long grain white rice. I don’t recommend trying this with brown rice since it takes a long time to cook on the stove top and I’m not sure how much liquid you would need.
  • I’ve made this with ground sausage before too and it was great.
  • If you don’t have peas or don’t like them you can use whatever frozen vegetables you like or have on hand. Just give them a few minute to thaw or pop them in the microwave a few minutes to thaw before adding them in they are larger pieces.

      Yes, I do! I’d just add water and adjust the cook time to more reflect what the orzo says on the package (I do think it’ll work but the amount of liquid you’ll need and how long to cook it are the variables that are going to change when you use it). Let me know if you try it and how it works!
