Step #1. In a large pot, add the potatoes, green beans, ham, onion, broth, and slat. Place a lid on the pot and heat. Bring the mixture to a simmer and allow it to cook, stirring occasionally.
Step #2. Take the lid off and place the corn on top of the mixture. Replace the lid and continue to cook, until the potatoes and green beans are cooked through.
Step #3. Remove from heat, remove the corn and place it on a serving dish. Add extra salt and pepper to the pot and stir.

Farmstand One Pot Wonder Recipe
Ingredients
- 1 to 1/2 pound fresh green beans, trimmed and broken
- 2 pound new potatoes, cut into 1-2 inch chunks (peel left on)
- 1-2 pound cooked ham, cut into 1 inch cubes
- 4 cups broth, chicken or vegetable are both good
- 1 medium onion, sliced thin
- 1 teaspoon salt
- 4-6 ears corn
Instructions
- In a large pot add the potatoes, green beans, ham, broth, onion, and salt. Put a tight fitting lid on the pot and put it over medium heat. Bring the mixture to a low boil/simmer and allow it to cook for 25 minutes, stirring occasionally. Take the lid off the pot and carefully place the corn on top of the mixture in the pot, replace the lid and allow the dish to cook for an additional 15-25 minutes until the potatoes and green beans are cooked through.
- Remove from the heat, remove the corn and place it on a serving dish, Add more salt and pepper to the pot, to taste, serve hot with corn on the side.

This has been a favorite in my family for awhile, we always called it poor mans stew. We dont do the corn & most of the time it was made with just green beans, onions & potatoes. We let the potatoes cook down until it forms a stew & If they were lucky they would have a ham bone to put in it, hence the name. No matter what the name is, it is delish!

We make this in a crock pot. We use, sausage, ham or just about any meat you want. It’s so simple & easy. It’s a great basic recipe. We have also put in bell pepper &/or corn. Delicious!
i make something simular but i did’t know it had a name. i put g.beans on bottom of pot the sliced carrots,sliced onion then the chunked potatoes. slice smoked sausage on the top (no liquids) with lid and cook for 1hr. the vegatables make their juices. Oh so good

Wow, thank you for an allergy free meal (using uncured ham)! Good amount of veggies to boot! My sister used to throw things in a pan in layers then pour in a bottle of Catalina (sweet and sour dressing), cover, cook on low for an hour. I like it better in the crockpot with homemade sweet and sour, but I want to make your version, too. Paula Dean makes a In a Rush Boiled Dinner- ham, potatoes, carrots, cabbage and onions in a pot with just enough water to keep it from burning (not enough for everything to swim in). Pretty good!

That looks delicious!!! I make something similar, although the water just absorbs into everything so there is no gravy. And the bottom layer caramelizes a little. Mine is called Sausage, Peppers and Onions, but I make it with green beans and smoked sausage instead ๐
