Sourdough Recipe FAQs

What ingredients do I need for sourdough bread?

You only need a sourdough starter, flour, water, and salt. That being said, I have had the best luck using unbleached flour and, if you can, organic flour. The natural yeast in the starter seems to do better with these flours. And as far as water goes, I use tap water. If your water is highly treated, you might want to consider using bottled or filtered water. If you have a lot of chlorine in your water, you can let a glass of water set out overnight, giving the chlorine time to dissipate a bit.

Why Won’t my sourdough starter rise?

If you get to day 7 in a homemade starter, OR if you’ve been given a mature starter and it’s not rising after two days of consistent feeding, you need to change something. You’ll want to adjust something and see if it helps—like switching to bottled water, organic flour, or warming up the area your starter is in. I’d choose one of these three things to do first and try it for two days.

If I’ve kept my sourdough starter in the fridge, how do I prepare it for baking?

To use your starter out of the fridge, simply remove it from the fridge, discard everything but 25 grams, and feed that reserved 25 grams, 50 grams of flour, and 50 grams of water. Stir it up well. Let it get bubbly, and then you are ready to use it. I normally pull mine out and feed it in the late morning or at lunch to prepare it to make a batch of bread dough that evening (the dough will rest overnight and be baked the next day).
