These Easy Pepperoni Muffins are quick, easy, and delicious. They make the perfect after school snack or a great meal on the go.

Ingredients 

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped pepperoni
  • marinara sauce for dipping

Instructions 

  • Preheat the oven to 375 degrees and grease a 12-cup muffin tin well, set aside.
  • In a medium mixing bowl add the flour, baking powder, Italian seasoning, and salt. Whisk to combine.
  • Add the milk, egg, mozzarella, and Parmesan and stir to combine well but don’t over mix.
  • Fold in the pepperoni.
  • Divide the batter evenly among the prepared muffin tin.
  • Bake for 22-26 minutes or until golden brown.
  • Remove from the oven and let the muffins rest for 5 minute before removing them to cool on a wire rack. Serve warm with marinara sauce.

Notes

  • You have a lot of freedom with these! Feel free to add veggies or other favorite pizza toppings to the muffin batter to make your favorite pizza flavor.
  • These store great in the fridge for up to 5 days and they reheat well. My kids also didn’t mind them cold with their packed lunches.
  • These make a great side for soups as you would grilled cheese.
