Recipe FAQs
You’ll want to use a bread that is a little sturdier for most of these sandwiches on a stick so that it doesn’t fall right off. Use some from the bakery at your favorite grocery store or your favorite homemade loaves.
You can use the suggestions in the recipe, but really any kind of salad dressing or sauce that you love to eat would work well. These dressings are a great place to start if you need ideas.
Expert Tips
- My kids and I love these for lunch and they don’t take much more time than making a traditional sandwich.
- I found it easiest to make the peanut butter and jelly sandwich and then slice it into bite-sized pieces.
- I like to get the ingredients we are using for the day ready and have my kids make their own sandwich-on-a-stick.
- If you have little kids below school age, it’s nice to make their lunch box (and yours!) in the morning when you are making the other lunches. I just stick the little boys’ lunches in the fridge and then lunch is done for everyone, even the ones at home!
- Have your kids help you decide what they want for lunch and get them involved in the prepping/packing. When my kids have a little say in their lunch, they are much more likely to eat it.
- If you have a nut-free school (ours is not), try sun butter (made from sunflower seeds) in place of peanut butter, and omit any nuts.
- To cut down on morning prep time, make a veggie box and have the kids take from it for their lunches.
- Use cupcake liners to keep food separated.
Tips for Incorporating Organic Foods into Your Lunch Boxes
- Horizon Organic Milk Boxes and Cheese Sticks make for great grab and go options.
- When buying organic produce, just pick out a few at a time. Send your kids with organic carrots and celery or bell pepper and cucumbers instead of all three. You’ll keep more variety in their lunches and have less food waste in the fridge.
- Shelf-stable organic items are great to have on hand, and they don’t spoil quickly. I fill our lunches with nuts, dried fruit, chocolate chips, and even organic popcorn.
