How to Make Brussels Sprout Salad
Step #1. Using a mandolin or a sharp knife, finely chop your brussels sprouts. Set aside.
Step #2. In a small bowl, whisk together the olive oil, lemon juice, and dijon mustard until homogenous.
Step #3. Toss the salad dressing, chopped brussels sprouts, dried cranberries, sliced almonds, and parmesan cheese together in a large bowl.

We don’t recommend storing the dressing and salad in a container together. However, you can prep the salad ingredients and store them in a separate container than the dressing. You can store your prepped ingredients in an airtight container or Ziploc bag for up to 5 days.
The best way to shave your brussels sprouts is to first cut the stem off and then use a sharp knife to thinly slice the brussel sprout. Trimming off the stem will give you a flat surface to hold up the veggie as you slice it.
If you are wanting a sweeter salad then you can add diced apples. We like to use honey crisp apples, but any kind of apple will work. You can also add cucumber, carrots, or red onion to add some more depth and nutrients to your salad. If you don’t have any parmesan cheese then you can replace it with freshly grated white cheddar cheese.

If you want to store your salad then we recommend keeping the salad and dressing separate. This will help prevent the brussels sprouts from becoming oversaturated and getting soggy. When kept separate, you can store the salad in an airtight container for 5 days and the dressing in a separate container for 2 weeks. If the salad and dressing are already combined then you can store this salad in the fridge for 2-3 days.
