  • Flour Tortillas: Large flour tortillas will work best, but feel free to use what you have on hand.
  • Scrambled Eggs: You will need about 8 large eggs to get 2 cups of scrambled eggs.
  • Bacon: You can use fresh or precooked bacon for your burritos.

How to Make Breakfast Burritos

Step #1. Cook eggs, bacon and slice avocado.

Step #2. Fill a large tortilla filled with scrambled eggs, bacon, cheese, and avocado.

Step #3. Roll tightly. Cook burritos over medium-high heat with the seam side down first.

Step #4. Cook until golden brown and then turn to cook the other side. About 5 minutes on each side.

Can I freeze my breakfast burritos? 

Absolutely! Make several ahead of time to have for breakfast on those busy mornings. To freeze, wrap each burrito individually in a paper towel followed by plastic wrap. You can freeze these burritos for up to 3 months. When you are ready to eat them, just reheat your frozen burritos in the microwave for 1 1/2 minutes

How do I keep my burritos from falling apart? 

It’s definitely more fun to eat a burrito that is intact instead of one that is falling apart.
Try warming up the tortilla a little before adding the filling ingredients. Don’t overstuff. If there is too much inside the burrito it can easily fall apart. When you are ready to roll up the burrito, first fold one edge over the filling and tightly roll the burrito. Not rolling tightly enough can also lead to the burrito falling apart.

  • To help ensure you get a little bit of everything in each bite, you can mix the scrambled eggs, cheese, and bacon together in a bowl. Then scoop the egg mixture onto the tortilla and top with avocado slices. This will help to more evenly distribute all of the flavors for each bite. 
  • We recommend waiting until your burritos are fully assembled and ready to go before adding any sauce. It is easy to dip your burrito in sauce since you won’t have to worry about your hot sauce or salsa seeping through the tortilla and making it soggy.

How to Store Your Breakfast Burritos

You can freeze these burritos for up to 3 months by wrapping them individually in a paper towel followed by plastic wrap or tin foil. Reheat a frozen burrito in the microwave for 1 ½ minutes in the paper towel.

Ingredients 

  • 4 large flour tortillas
  • 1 cup cheddar cheese
  • 2 cups scrambled eggs, from 8 eggs
  • 12 slices bacon, cooked crisp
  • 1 large avocado, sliced
  • salt and pepper, to taste
  • hot sauce and/or salsa, optional

Instructions 

  • Top a large burrito with scrambled eggs, cheddar cheese, bacon, and avocado.
