Roasted potatoes in the air fryer is one of my go to side dishes. You can quite literally serve these potatoes with anything and they will complement your meal perfectly. I love the savory and bold flavors that come from the Italian seasoning, dill, and garlic powder; however, you can use any spices to give your potatoes a unique and unforgettable taste.
The melted butter coats the diced potatoes nicely to help them get that golden, crispy texture on the outside. To add a nice garnish on these potatoes before serving, you can sprinkle some grated parmesan cheese or fresh parsley on top.

How to Make Air Fryer Roasted Potatoes
Step #1. Preheat your air fryer. Wash your potatoes then dice them into pieces about one inch wide.
Step #2. Add your diced potatoes to a large bowl along with the melted butter, Italian seasoning, dill, and garlic powder.
Step #3. Transfer your potatoes to your air fryer basket and cook. Give your potatoes a stir about halfway through and continue cooking.
Step #4. Serve and enjoy!
Recipe FAQs
Some people will boil potatoes before cooking in the oven to help them cook faster, but it is not necessary in this recipe. The air fryer does a great job at crisping up the edges and cooking the potatoes quickly all at once!
Try poking a few of the potatoes with a fork. If there is little to no resistance then your potatoes are done cooking! You can also keep an eye on the edges to ensure they are golden brown and crispy but not burnt. Stirring the potatoes or shaking the basket about halfway through will ensure that they are cooked evenly on all sides.
We used Russet potatoes in this recipe, but you can also substitute them for Yukon gold or baby red potatoes. As long as you have about 4 cups of diced potatoes you will be good to go.
If you find that your potatoes are not getting very crispy in the air fryer, there is probably an excess of moisture on your potatoes, they are not completely covered in the butter, or the air is not freely flowing while it cooks. Ensure that you pat dry the diced potatoes before you add the butter and seasoning to remove any moisture. The butter will help the potatoes have a nice crispy edge, so mix them well. Lastly, do not overcrowd the air fryer, keep the potatoes on a single layer and not touch each other. If you follow these steps you are guaranteed to have crispy potatoes!
How to Serve and Store Air Fryer Roasted Potatoes
Roasted potatoes make a fabulous side dish. Try adding these potatoes as a side to easy baked salmon, slow cooker pork tenderloin, roast beef, or simple skillet chicken parmesan along with a roasted vegetable such as asparagus. I like to top mine with a bit of sour cream or parmesan cheese for an extra garnish. You simply can’t go wrong with serving these savory, roasted potatoes.
Any leftover roasted potatoes can be stored in an airtight container in the fridge, for up to 5 days! You can reheat your potatoes in the microwave for about 45 seconds, or in the air fryer for 5 minutes at 370°F. Please note that reheated potatoes will not be as crispy as fresh potatoes but they will still bring on the flavor.

- Salted or unsalted butter will both work for this recipe! If you use unsalted butter, you will want to add ½ teaspoon of salt to your potatoes especially if you are using sweeter Yukon gold potatoes.
- When dicing the potatoes, try to keep the pieces about the same size. This will ensure that they cook at the same rate.
- Don’t worry about peeling your potatoes before cooking them! The skin adds a nice texture and delicious salty flavor.
- Other spices you can add to these potatoes for a different flavor include dried thyme, rosemary, onion powder, paprika, or lemon pepper.
- You can replace the butter with olive oil or coconut oil.

Air Fryer Roasted Potatoes
Ingredients
- 3 large russet potatoes, diced
- 1/4 cup butter, melted
- 2 teaspoons Italian seasoning
- 2 teaspoons dried dill
- 1 teaspoon garlic powder
Instructions
- Preheat your air fryer for 5 minutes at 370°F.
- Wash your potatoes and then dice them into pieces that are about one inch big.
- Add your diced potatoes to a large bowl along with the melted butter, Italian seasoning, dill, and garlic powder. Fold to combine.
- Transfer your diced potatoes to your air fryer basket and cook for 10 minutes at 370°F. Give your potatoes a stir and cook for an additional 7 minutes.

- You can also use Yukon gold or baby red potatoes. Just make sure you have about 4 cups of diced potatoes.
