One of our favorite things about this recipe is being able to add just about any toppings you want. We like to switch out the bacon for ground sausage every once in a while to add some extra heat to our tacos. You can also experiment with different sauces and cheeses to add your own personal touch. Step #1. Gather all of the ingredients, prepare the bacon and shred the cheese if needed.

Step #2. Scramble your eggs in a large pan and place a spoonful of eggs on each tortilla.

What is the difference between breakfast burrito and breakfast taco?

The biggest difference between breakfast burritos and breakfast tacos is in the form. Burritos typically use larger tortillas which allow for more ingredients inside, and are wrapped up together. Tacos are usually made with smaller tortillas and are open faced, so they don’t use as many ingredients due to not having as much space! It is up to you what ingredients to use for these foods, you can’t go wrong either way.

Can I freeze breakfast tacos?

I don’t recommend freezing already assembled breakfast tacos, as they might become soggy upon reheating and they are hard to store due to their open form. However, you can freeze certain ingredients from the breakfast tacos such as the eggs or bacon, and assemble fresh tacos when needed! This also applies for storing them in the fridge. They do not save well when previously assembled, but you can store all of the ingredients separately and assemble them back together at a later time when you want to enjoy them again.

How can I prevent tortillas from getting soggy?

The most sure way to prevent your tortillas from getting soggy is to avoid any ingredients that are watery. When it comes to ingredients like salsa, we like to make sure they go on top of the eggs to create a little barrier between the wet ingredient and the tortilla. If the tortillas do get slightly soggy, it should not be too big a problem as long as the tortilla doesn’t break.

How to Serve Breakfast Tacos

I like to lay out all of the toppings including cheddar cheese, salsa, bacon, green onions, avocado, and olives in a buffet style so that everyone can make their own taco and include everything they want. These tacos pair wonderfully with fresh fruit, guacamole, or hash browns for a breakfast meal, but you can even serve these tacos for dinner!

Expert Tips

  • Additional toppings you can include are hash browns, guacamole, cilantro, sour cream, or beans! Choose whatever you like best or have on hand. 
  • If you want cheesier tacos, you can add ½ cup of cheese to the eggs as they are cooking.
  • Store bought or homemade salsa will both taste wonderful in this recipe! You can use a chunky salsa, or a more blended salsa.  
  • Use your favorite seasonings on the eggs to boost their flavor! You can try garlic powder, salt and pepper, or red pepper flakes for some heat.
  • Heat up your tortillas for 10 seconds in the microwave to give you a warm base to build your tacos.
