How to Make Sweet Potato Hash
Step #1. Prepare all of the ingredients for sweet potato hash. Make sure your potatoes are peeled and diced into roughly 1-inch pieces.
Step #2. Heat your oil in a medium sized skillet or pan. Add the sweet potatoes and cook until the potatoes are soft and tender. Stir occasionally.
Step #3. Add the bell peppers and onion. Continue cooking the hash until the bell peppers are soft.
Step #4. In a separate pan, scramble your eggs over medium-high heat. Once the eggs are cooked, fold them into your hash. Salt and pepper to taste and top with diced green onions as desired.

Your sweet potatoes should be soft and tender by the time the hash is finished. In order to ensure your potatoes cook through all the way, be sure to give them ample time cooking in the skillet before adding any additional ingredients. You can check to see if your sweet potatoes are done cooking by poking a few with a fork. The fork should pierce the potato with little to no resistance.

Sweet Potato Hash
Ingredients
- 3 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- ½ white onion, diced
- 4 large eggs
- Salt and pepper
Instructions
- If you haven’t already, peel your sweet potatoes and dice them into one inch cubes. Dice your bell peppers.
- Heat your olive oil in a medium sized pan or skillet for 2 minutes over medium heat. Add the diced sweet potatoes and allow them to cook for 10 minutes, stirring frequently.
- Once the sweet potatoes begin to brown, add the diced bell peppers and onion. Allow the hash to continue cooking for an additional 10 minutes, or until the veggies are soft and tender. Stir the veggies frequently.
