If you’re a fan of leftover pizza for breakfast, then you’re going to die when you taste this cheesy breakfast pizza! Made with fluffy scrambled eggs, tater tots, and two kinds of breakfast meat, this hearty pizza will be the perfect addition to your next Saturday morning brunch.

Whenever I have leftover pizza dough from the night before, I make this easy breakfast pizza! It features all your favorite breakfast foods like crumbled sausage, scrambled eggs, fried potatoes, crispy bacon, and lots of cheddar cheese. Once slice of this pizza is like eating an omelet or breakfast sandwich, but way more fun!

Ingredient Notes

  • Pizza Dough—Can be found at some grocery stores, or you can make your own homemade dough.
  • Eggs—Add a fluffy texture and lots of salty flavor to this dish.
  • Breakfast Sausage—Crumbled. I like to use hot sausage, but you can use mild or Italian-seasoned.
  • Bacon—Cooked until crispy and chopped into bite-sized pieces.
  • Tater Tots—Baked or air fried until golden and crunchy.
  • Cheddar Cheese—Because you can’t have a pizza without cheese!

How to Make Bacon Breakfast Pizza

  1. In a large pan over medium heat, cook the breakfast sausage until crumbly and no longer pink.
  2. Push the cooked sausage to one side of the pan. To the other side, add the scrambled eggs and cook until fluffy.
  3. Gently fold together the cooked sausage and the eggs. Set aside.
  4. Roll out the pizza dough and top with the egg mixture, tater tots, bacon, and cheese.
  5. Bake until the crust is golden brown and the cheese has completely melted.
  6. Slice, serve, and enjoy!

What is breakfast pizza made of?

Breakfast pizza can look a little different depending on where you get it, but generally speaking, it’s made by topping a regular pizza crust with scrambled eggs, cheese, and some kind of breakfast meat like bacon or sausage. Sometimes breakfast pizzas are also topped with veggies like mushrooms or bell peppers and fun garnishes like salsa or hot sauce.

Does breakfast pizza have sauce?

You might notice when reading through this recipe that my sausage breakfast pizza doesn’t have any sauce! In fact, most breakfast pizza recipes omit the sauce. This is because there is so much moisture in the eggs, that adding sauce would cause your pizza to be soggy. Plus, I find that this dish is flavorful enough on its own. However, if you’re really itching to add some sauce to this pizza, I would recommend drizzling some sour cream, salsa, sausage gravy, or hot sauce over the top before serving.

Is breakfast pizza a Midwest thing?

Not strictly, no. Breakfast pizza is a popular dish in the Midwest, but you can also find this meal at restaurants all over the country. What makes Midwestern breakfast pizzas unique is that they feature a cheesy sauce instead of shredded cheddar cheese.

How to Serve and Store the Best Breakfast Pizza

This breakfast pizza is packed with protein but is lacking in the veggie department. To combat this, I recommend serving your breakfast pizza alongside some steamed broccoli, pan fried zucchini and mushrooms, chips and salsa, or even a green smoothie packed with spinach. You can also pair this unique breakfast dish with more classic sides like hashbrowns, oatmeal, and fresh fruit.

Any leftover breakfast pizza can be stored in an airtight container in the fridge for up to 4 days. I find that you can reheat this pizza in the oven, air fryer, or microwave. Just be aware that the flavors in this leftover pizza will still be bold and delicious, but the texture will be a bit chewier. 

Expert Tips and Tricks

  • Not a fan of scrambled eggs? You can top this pizza with whole raw eggs instead and watch them turn into perfectly fried eggs in the oven. The yolks will even be a little runny!
  • Don’t have any breakfast meats on hand? You can really use any kind of protein to top this pizza. Leftover chicken, steak, or even lunch meat will taste good on your homemade breakfast pizza.
  • I like the bite of a sharp cheddar cheese on this pizza, but feel free to use your favorite kind of melty cheese. Mozzarella, provolone, gouda, colby jack, and monterey jack all work well.

Breakfast Pizza

Breakfast pizza is made with fluffy scrambled eggs, tater tots, and two kinds of breakfast meat, this hearty pizza will be the perfect addition to any morning.

Ingredients 

  • 1 pound ground breakfast sausage
  • 4 large eggs
  • 1 pound pizza dough, (homemade or store bought)
  • 1 ½ cups cheddar cheese
  • 2 cups cooked tater tots
  • ¾ cup chopped bacon

Instructions 

  • Preheat the oven to 450°F.
  • In a large pan or skillet, cook the breakfast sausage over medium heat until it is cooked all the way through.
  • Push the sausage to the side of the pan and, without removing any of the excess grease, add the eggs to the empty side of the pan. Scramble the eggs and stir until fully cooked. Fold the eggs and sausage together.
  • Roll out the pizza dough and place it on a circular baking sheet. The pizza should be 10-12 inches across.
  • Spoon the sausage mixture over the pizza dough and top with the cheese, tater tots, and bacon.
  • Cook the pizza for about 14 minutes, or until the cheese is fully melted.
  • Serve and enjoy!

Notes

  • The pizza dough recipe linked to above will make 2 pounds of dough or enough for 2 pizzas or 1 pizza and a batch of breadsticks. 
  • Using homemade crust vs. store bought crust does not affect the end flavor of the pizza.
  • You can use mild, medium, or sharp cheddar cheese. If you like your breakfast food a little spicier, you can sub the cheddar for pepper jack cheese.
  • This pizza is great served with a side of salsa.
  • Store your leftover pizza in the fridge for up to 4 days in an airtight container and reheat it in the microwave for 50 seconds.
  • Other toppings you can add to your breakfast pizza include diced bell pepper, diced onion, mushrooms, ham, spinach, etc.
