Glazed Carrots

Now, I know what you’re thinking. Carrots? Really? Aren’t they just those crunchy, boring veggies you find in salads or use as dippers? Well, my friend, let me tell you, glazed carrots are in a league of their own. They take those humble, ordinary carrots and transform them into a delightful treat that will have you reaching for seconds.

So, what exactly are glazed carrots? Well, imagine tender, cooked carrots coated in a luscious, sweet glaze. The glaze is what takes these carrots from ordinary to extraordinary. Made with a combination of butter, brown sugar, and a touch of maple syrup. The glaze caramelizes as it cooks, creating a rich, glossy coating that enhances the natural sweetness of the carrots.

Instructions

  • Clean and peel the carrots.
  • Slice the carrots into ¼-inch thick slices. Cut straight for a circle or diagonal for more of an oval shape bite.
  • Place the carrot slices into an 8 or 10-inch skillet. Add water, salt, and ground black pepper.
  • Over medium-high heat, bring to a boil, stirring often. approximately 10 minutes. The carrots should be tender but still have a slight crispiness.
  • Drain the water.
  • Add the butter, brown sugar, and maple syrup.
  • Over medium heat, using a heat-proof spoon, mix and bring to a boil.
  • Reduce to a simmer and let the sauce thicken up and coat the carrots. Cook for 8 to 10 minutes until the carrots are nicely coated and have reached the desired doneness.
  • Serve and Enjoy!

Notes

  • Make sure to cut all the carrots to the same thickness, as much as you can. This way they will cook more evenly.
  • Glazed carrots are a great side dish when served with a rice or beef main course.
  • Storage: Store in an airtight container in the fridge for 2 days.
  • Re-warm: You can rewarm in the microwave, but I did mine in the air fryer. It adds a layer of crisp and still a nice sweet flavor to it.
